A method of preparing unfiltered ales for consumption by transferring freshly processed beer straight into casks for storage and clearing. Yeasts left in the cask continue to ferment and add carbonation infusing the beer with refined flavors. Beer is dispensed from the cask using gravity (and oxygen) so once tapped the cask should be consumed within 48 hours.
